Healthy Recipe Night

We've been having fun experimenting with all sorts of healthy recipes lately. We've swapped out our pasta for spaghetti squash or zucchini noodles. I bought a cool kitchen gadget that spirals the zucchini into noodles. I decided to have a bunch of girls over one night to hang out and share healthy recipe ideas. Everyone brought a recipe to share and we just ate and talked. Here are some pictures of the different dinners we've had lately, and the recipes the other girls brought as well.

Beef pad thai using spaghetti squash for the noodles.

Revolution rolls. No flour! They are made with eggs and low fat cream cheese. They taste like a cream puff.

Grilled chicken Italian spaghetti squash with feta.

breadsticks made with cauliflower.

Appetizer plate: jicima fries, cucumber sandwiches, tomato basil mozzarella skewers.

It was a lot of work, but it was a fun night!
